Blue Monday, according to pseudoscience is the most depressing day of the year. It’s formula takes into account your New Year’s Resolution failing, debt, weather, shortness of day, lack of motivation and so on. This year (2018), our unhappy Blue Monday falls on January 15th.
At a peak of 11 degrees (C) here in London and a strong chance of rain, I’d say yep, thats about right. I strongly suggest phoning in sick, ordering a pizza, and staying hidden under your duvet covers all day. If you need a little pick-me-up, I’ve also got just the drink for you. I’m going to show you a way how to make Blue Monday better.
I couldn’t let Blue Monday come and go without designing a drink in it’s colour namesake. When people think blue alcohol – blue curacao jumps to mind. Curacao is my husband’s favourite drink (so there’s usually a bottle or two around the flat), but for me the sickly, sticky sweetness of an orange liqueur in the colour of blue makes me shudder. So this is the question for today! How to make curacao not tacky, delicious, but also warming and comforting in these short January days.
Myself, and many people I know are also taking part in #veganuary, so a vegan drink is a must too! (Nobody mention the bacon sandwich I cave and ate the other day okay – what was that about failed resolutions?). With all these things in mind, I present to you my perfect, smooth and creamy, citrus-y and almond-y, vanilla Blue Monday drink.
I also wanted to take a moment to share a little confession. Normally when I make recipes, I state “this is my favourite thing in the world”. Well, the truth is, THIS is actually my favourite thing in the whole world. The blue colour is deceptively misleading, as when the flavours hit your tongue they’re more akin to fragrant oranges and vanilla soaked in almonds. A really light and delicate drink. 100% vegan, cruelty free, and 100% delicious. I’ve already made three of these. I also dare somebody to soak their breakfast cereal in this.
So in short, I think my love for curacao has been kindled. Who knew the sickly liqueur could create something so delicate and palatable?
This recipe definitely wins the award for being the shortest recipe on this blog so far (and probably ever) with only two steps. Mix, and pour. So honestly, on this Blue Monday where your motivation is at an all time low – there’s no excuse not to make this!
